Just Wing It

I’m out of town so a few members of my Pot Posse are being featured today.  Knowing I was in a frizz to get things scheduled before I left town, they graciously allowed me to lift their posts, word for word, from a closed pressure cooker group of mine. Way to have my back!

Pot Licker      “I made wings today. Browned them first, then used enough wing sauce in the pot to have enough liquid to reach pressure. 7 minutes then NPR. Took them out and tossed them into a baking dish and drizzled them with more wing sauce. I will pop them in the oven to crisp the skins when I get to my friend’s house. Taste test report will come later. [Later that day…] They disappeared in less than 10 minutes. I guess that means they were good…The meat was falling off the bone. Everyone was loving them… I wish I’d doubled the amount of wings I cooked. People were coming into the kitchen asking for the wings they’d heard about long after they were all gone.” Continue reading “Just Wing It”

Be a Good Egg

Did you ever in your life think that hard boiling eggs would be an issue? Or a hotly debated topic of discussion? More on this in a bit.

Who hasn’t made hard boiled eggs? There are multiple methods. But it all boils down to this: Put eggs in a pan in a single layer, cover with water, bring pot to a boil, wait for water to boil, cover pot, turn down heat to keep water warm, set timer for 10-12 minutes, transfer eggs to an ice bath. Peel and eat. Or put in the refrigerator until you need or want them. What’s so hard about that? Seven or eight easy steps. [sarcasm, in case you missed it]. Lemon Curd is the Word

lemonsWhen life hands you lemons, make lemon curd. It’s seriously good stuff. Who knew?

Lemonade, lemon pudding, lemon meringue pie, lemon almost-anything. Love it. Oh, and Limoncello. Can’t forget Limoncello. But lemon curd has never been on my radar. First of all, curd. Can you honestly say that curd sounds even remotely appetizing? Let alone edible. The first thing that came to mind was ‘curds and whey’.
