Instant Pot Pierogi Lasagna

If you’re not familiar with pierogi then you didn’t grow up in an Eastern European immigrant household. Or didn’t have neighbors who were of Eastern European descent. Or have a last name with precious few vowels in it. Or live in a region with a large population of Polish, Slovak, Croatian, Serbian, or Slovenian descent, to name a few. I was lucky enough to experience all of these scenarios.

Exactly what are pierogi? They are one of the many different type of dumplings found the world over. Ravioli, gnocchi, dim sum, wontons, empanadas, and American dumplings are the ones most of us have heard of. Any of us who have tried to make them know how much work is involved in making each individual dumpling. And they get eaten so quickly in one sitting that you’re wondering if all that work was worth it. (It was.)

Enter Instant Pot Pierogi Lasagna. Dough, potatoes, onions, cheese. All those super delicious ‘old country’ favorites in one easy to make pan of delicious. Hours in the kitchen hovering over a hot stove have transformed into minutes in the kitchen waiting for the ever cool (in form and function)  Instant Pot to do the cooking for you.

The hardest part of this recipe for me, was putting amounts to ingredients. I come from a long line of cooks who eye-balled their ingredients. Exact amounts were mere suggestions. The actual amount of any ingredient that made it into a recipe was based on personal preference and how much of something you had on hand. You like cheese? Go heavy on the cheese. You like potatoes? Put in more potatoes. Onions? Load it up. You don’t remember cottage cheese in yours? No big deal. Leave it out. Those of you who learned to cook from Baba (Grandma) and Mama know what I’m talking about.

I was all set to make this recipe in my snazzy new 6-inch push pan. I was excited because I know what a challenge it is to try to fit rectangular no-boil lasagna noodles into a round pan. But that’s exactly what I ended up doing because I had to use my 7 inch spring form pan. Have an entire box of noodles on hand. It’s like fitting a jigsaw puzzle together. Things could get tense. Let’s just say if you learned any colorful words from Baba you’ll probably be using a few. But it’s nice to keep up the old ways. Right? And the effort is worth it so that’s all that matters.

For those of you who prefer to follow recipes more or less exactly, I have created a recipe that will give you the traditional flavors. A quick and easy version of traditional pierogi. Making it lasagna-style instead of making individual pierogi allows you to have all the taste you know and love in a fraction of the time.

Ingredients
  • 1, 4 oz. package instant mashed potato mix
  • 1 box oven ready (no boil) lasagna noodles
  • 1, 16 oz. container cottage cheese
  • 1, 8 oz. package shredded cheddar
  • 1 large onion, small dice
  • 4 tbsps butter or margarine
Instructions
  1. Prepare instant mashed potatoes according to package directions.

  2. Saute the diced onion in butter until caramelized.

  3. Mix the onion, 1/2 cup shredded cheddar,  and the mashed potatoes together.

  4. Cover the bottom of your pan with a layer of lasagna noodles.

  5. Spread 1/3 of the cottage cheese evenly over the noodles.

  6. Spread half of the mashed potato mixture over the cottage cheese.

  7. Sprinkle 1/2 cup shredded cheddar over the mashed potatoes.

  8. Repeat the noodles, 1/3 of the cottage cheese, and the rest of the mashed potato mixture. Sprinkle with 1/2 shredded cheddar.

  9. Put a final layer of noodles. Cover with the remaining cottage cheese.

  10. Sprinkle the top with 1 cup of shredded cheddar.

  11. Allow the lasagna to sit for about 5 minutes so that the noodles soften a little.

  12. Make sure you inner pot is inside your Instant Pot. Pour in 1.5 cups water.

  13. Put the trivet in the pot..

  14. If you are using a spring form pan or a push pan, wrap the bottom of the pan in foil to avoid any water getting in the pan.
    If your pan has a solid bottom, no foil is necessary.

  15. If your trivet has handles, put your pan on the trivet.
    If your trivet doesn't have handles, make a sling out of aluminum foil and put the pan on that prior to placing it in the pot.

  16. Place a piece of foil on top of the pan to stop condensation from the lid of the pot from getting in the lasagna.

  17. Close the lid of the Instant Pot. Set the vent to Sealing. Choose the  Manual setting and set 23 minutes cook time. When the cook time is over, do a 10 minutes NPR. Remove the lasagna from the pot and allow it to sit for about 15 minutes before serving.
